20 oz. frozen diced potatoes with bell peppers
Cooking Spray
7 Eggs
1 lb Chorizo Sausage
1/2 Diced Onion
1 cup Milk
1 1/2 Cups Shredded Cheddar
1 Cup Gouda/Parmesan Cheese Mixture (I used a cheese from Finland but any cheese will do)
Garnishment items optional (Cilantro, Parsley, Sour Cream, Jalapenos, Sriracha)

Pre-heat your oven to 350 degrees. Cook your sausage until done and add onions until they are clear. Mix all of the ingredients (minus the garnishments and your 1 cup of gouda/parmesan) in a bowl. Spray cooking oil in a 9 x 13 pan. Add ingredients from the bowl into the pan. Bake for 30 minutes. Add the rest of your cheese to the top and bake for an additional 8 minutes. Let casserole sit for 15 minutes before serving. Add garnishments of your choice.
