1c Walnuts or Almonds finely chopped
1 1/4 c Flour
1/2 c Unsalted butter
1/2 c Confectioners Sugar
2 Egg yolks

Directions:
Using an electric mixer on medium speed, cream butter and sugar until fluffy (about 4mins.) Add the egg yolks one at a time. Reduce the speed and add walnut/flour mixture. Blend until mixed. Cut dough in half wrap each half in plastic forming into disk. Chill at least 1hr.


Preheat oven to 350 degrees Spray pans with cooking spray or use parchment paper. Roll out first disc (tops) to 1/8 " thick. Cut out with cookie cutter. Use smaller cutter to make hole in middle. Bake 12 mins. Using same cookie cutter cut out the bottoms. Bake 15 mins. Try to get same amount of tops and bottoms, bake the small hole cut outs. When done take out put on wire rack and let cool.


To put the cookies together, spread jam evenly over cookie bottoms. Sprinkle powdered sugar over tops and top jam bottoms. Store in airtight container up to one week.
