Ingredients for crust:
1 cup flour
1 cup brown sugar
1 cup oatmeal
1 teaspoon cinnamon
½ cup melted butter

6 cups rhubarb

Ingredients for syrup:
1 cup water
3 Tablespoons cornstarch
1-½ cups sugar
1-½ teaspoons vanilla

Directions for crust:
1. Mix crust ingredients.
2. Press half of crust ingredients in bottom of 8x8-inch pan.
2. Press in 6 cups rhubarb.

Directions for syrup:
1. Mix ingredients.
2. Cook till thick and bubbly on high heat.
3. Stir a lot.
4. Add 1-½ teaspoons vanilla after boiled.
5. Pour over rhubarb.
6. Press down other half of crust.
7. Bake at 375º for 35-40 minutes.
8. Use 1-½ times recipe for 9x13-inch pan. Don't increase syrup, though; just crust and rhubarb.

Wonderful! I've tried this a dozen times or so, but just now dating it on 7/02/06... Bought a new gallon of ice cream to go with it. It seems like there is never quite enough crust so I usually increase it. My sister-in-law, Sheila, gave this to me.
