1 large sweet onion or 3 leeks chopped fine
1/2 to 1 lb ground hamburger
1/2 tsp. each oregano, ground black pepper, and basil if dried (the equivalent is 2 tsp fresh chopped of oregano & 1 tsp freshly chopped basil)- I use fresh basil and oregano from garden if I have. You may add more later to taste.
2 to 4 Tbsp. olive oil or avocado oil
1/2 tsp. seasoned salt
1 package onion soup mix or one you like for (3 to 4 servings)
12 cups boiling water
2 cans 8 oz or 16 oz Tomato Sauce
2 Tbsp. soy sauce
2 cups slice celery or extra
1 cup chopped celery leaves
2 cups sliced carrots (I add up to 3 or 3 1/2)
2/3 cup dried split peas (if I don't have I add small can of great northern or cannellini beans)
2 or 3 white or yellow potatoes chopped
2 cups very small pasta

Cut up celery, celery leaves, carrots. potatoes, zucchini etc.

In a large saucepan or kettle with a tight-fitting lid, brown onion in 2 Tbsp. oil until starting to turn translucent, then add remainder of oil and meat to brown.

Add pepper, oregano, basil, seasoned salt, and onion soup mix.

Stir in boiling water, tomato sauce, and soy sauce. Cover and simmer for about 15 minutes.

Add carrots and celery and the dried split peas to simmering mixture and cook for 30 minutes longer, adding more water if necessary. Add seasoning to taste.

Add pasta, chopped potatoes, sweet potatoes, and zucchini and simmer for 30 minutes longer, adding more water if need be.

Pass Grated Parmesan cheese to be sprinkled over individual servings if you are allowed on your diet.

Maybe frozen and warmed up in microwave or on the cooktop.

A family recipe that has been changed to make it healthier - less meat and less salt and more veggies. The girls loved it in the winter in Edmonton and we still eat it often in California. I think it was one of Zev's favorite. When i made it, he could eat it for lunch and dinner for at least a week if it lasted that long. Original recipe came from Sunset Magazine but it has been changed.

This Soup may be served as a main dish!

I also add sweet potatoes chopped, green beans, and/or other vegetables I have in pantry. I'll add kale when I'm warming up the soup for a change or veggies I have cooked to portions I'm reheating for another day.
