½ cup Crisco
1 cup sugar
1 egg
1 teaspoon vanilla
1 2/3 cups flour
1/3 cup cocoa
½ teaspoon baking soda
½ teaspoon salt
¼ cup milk
12 scoops Mint Chocolate Chip Ice Cream, softened slightly

In large mixer bowl, beat shortening, sugar, egg and vanilla until well-blended. In a separate bowl, combine flour, cocoa, baking soda and salt. Add flour mixture alternately with milk to sugar mixture, beating until well-blended. Cover, chill about 1 hour.

Drop by heaping teaspoonfuls onto an ungreased baking sheet, making 24 rounds. With palm of hand or the bottom of a glass, flatten each cookie into a 2 ¾-inch circle, almost ¼-inch thick. Bake at 375° until almost set, 8-10 minutes. Cool 1 minute; remove from baking sheet to wire rack. Cool completely.

Place scoop of ice cream on flat side of 1 cookie; spread evenly with spatula. Top with another cookie to form a sandwich. Wrap in foil. Repeat procedure with remaining cookies and ice cream. Freeze until firm.

Blend Crisco, sugar, egg and vanilla. Mix dry ingredients separately. Alternate dry ingredients and milk into Crisco mixture. Refrigerate for 1 hour. Remove dough from fridge and use a cookie scoop to scoop out a ball. Roll it around and flatten it onto a cookie sheet with sugar dipped fingers. Fill cookie sheet and bake at 375° for 7 minutes.
