Directions:In a large bowl, combine flour and salt. Slowly add water until smooth. add eggs one at a time. This will be very runny. In another bowl, mix together cheese, butter, egg, sugar and salt.
Spray a small saute pan with Pam. By the ladle full (small ladle) pour the crepe mixture into the pan. Swirl the mixture around the pan so it is coated, but not thick. You only need a little of the crepe mixture. Let it cook until it bubbles a little. I use a fork to peel up a side and with my hands carefully flip crepe. You can try a spatula. The cooking should only take a minute or so. Put the crepe on parchment paper to cool while you continue to cook all the crepes. After all the crepes are made, spoon a little of the cheese mixture onto the middle of the crepe. Fold it up like a little pillow and finish filling all the crepes. I use my electric griddle, coat it with butter and fry up all the blintzes until browned on each side. When they are done, I usually put them in a giant tupperware, with a paper towel between each layer. They freeze well. |

Notes: The cheese is hard to find. When I find it, I usually buy them all, and end up making this dish but multiplying it by 7 times as much. It's a long process, but well worth it. Granny Boresow was the best at these.
