3 cups oats
½ cup sugar
1 cup brown sugar
1 cup flour
1 cup vegetable shortening, melted
¼ cup water, boiling
1 tsp baking soda
1 tsp salt
1 tsp vanilla

Directions:
Directions:
Preheat oven to 350 degrees.

Combine oats, sugar, brown sugar and flour in a large bowl of a stand mixer. Put the boiling water in a measuring cup and add baking soda and salt. Stir until dissolved. Then add vanilla into water mixture.

With mixer running, add melted shortening. Add water mixture to mixing bowl and mix well.

Drop by teaspoonfuls onto parchment-lined baking sheets. Press to flatten.

Bake 15-20 minutes. Cool on a wire rack.

Makes 4-5 dozen.

NOTE. For crisper cookies, replace brown sugar with white sugar. You can also add a bit of cinnamon.
