Ingredients: 1 package puff pastry
Filling: 12 oz vanilla pudding (Pre-made cups like Snack Pack) 7oz marshmallow cream (fluff) (You might need extra) 2 t vanilla 1 ½ cup sugar 1 ½ cup Crisco (try to find an off-brand that still has some trans fats in it)

Directions:Cookies: Defrost puff pastry overnight in the refrigerator. Lightly spray the wooden dowels with pam. Preheat oven to 400º. Cut each pastry sheet into thirds (where folded). Roll out on a lightly floured board until 12" wide and 6" tall. Cut with a pizza cutter into strips about ½" to ¾" wide. Twirl around dowel, slightly overlapping each twist. Put on cookie sheet with the tail tucked underneath. Bake at 400º for 11 minutes. Remove dowels from cookies as soon as the tray comes out of the oven. Cooled and unfilled cookies can be stored in a tupperware and refrigerated or frozen.
Filling: In a mixer on high (with the whisk attachment), cream together the pudding, vanilla and sugar until the sugar has been dissolved. Add shortening and marshmallow cream and whip until completely mixed and very fluffy. This will take several minutes. If it seems a little runny, add more marshmallow cream. Add a drop or two of food coloring if desired. Pink looks nice. Put into a piping bag or ziploc baggie. Filling can be frozen at this point. Snip a small corner and pipe into cookies when ready to fill them. They keep nicely for days filled. Sprinkle with powdered sugar before serving. Makes 120 cookies
Note: Get dowels from Mom or Heather or buy metal forms online. Do not use craft store dowels as they now have chemicals in them. |
