Ingredients: 2 3 lbs. mild Italian sausage, cut into links 3 large onions, diced 3 - 4 lbs. ground beef 3 cloves garlic, minced Ό cup each basil, oregano 1 tsp. red pepper flakes Salt & pepper 12 oz. tomato paste 3 4 28 oz. cans Italian tomatoes I use chefs cut 1 lb. mushrooms, cleaned, trimmed and sliced thickly Red wine

Directions:1. Add sausage to large pot; cook on medium heat to brown and extract fat. If desired you can add olive oil to pan, but I prefer to let the fat in the meat work for me. Turn to brown all sides; when done, remove to separate plate. 2. Add diced onions to pot there should be enough fat in the pot to work; if not add a little olive oil. When the onions have softened, add ground beef and stir to break up and brown. 3. Add garlic, herbs, salt and peppers; stir to incorporate. Add tomato paste and stir. Add red wine to paste can and set aside. 4. Add canned tomatoes. Pour the red wine from one empty can to another to everything out of the cans
too good to waste! Add mushrooms and sausage; cover and simmer. 5. Add meatballs into sauce gently. 6. Cook for about 3 4 hours. This batch will yield about 7 8 family portions. |

Ingredients: 1 head garlic ½ tsp. salt, pepper 2 lbs. ground beef (can combine with turkey) 1 large egg 2 3 slices bread, torn into large crumb Milk Ύ cup grated Romano or Parmigiano cheese Basil, Italian Seasoning 3 tbsp. chopped sun dried tomatoes (packed in oil variety)

Directions:1. Wrap garlic head in foil and roast in oven 350Ί for 1 hour. Remove and cool. Squeeze cloves to extract garlic, and mash. Add to large mixing bowl. 2. Add all other ingredients to bowl. 3. Soften bread with a little milk or oil from the tomatoes. Add to meat mixture. 4. Mix lightly with hands do not overmix! Form into balls. |

Notes: Jim & Marlene were visiting friends in Elmwood Park, and their Nonna made the pasta sauce. When Jim tasted it, he declared that it was just like Grandmas! Turns out both grandmas were from Bari! Marlene has modified this over the years to add a little Arrabiata to it. Makes enough for several portions to freeze.
