64 oz chicken stock
1 tsp Salt
1/2 tsp pepper
1 C onion diced
1 C celery diced
1 C carrots diced
2 - 3 bags of baby spinach chopped

1 pound of small meatballs
1/2 box acini de pepe-cooked

Directions:
Directions:
In a large soup pot. Add stock, onions, celery, carrots, salt, and pepper. Cook until vegetables are tender. Add spinach, meatballs, and acini de pepe, stir to combine and heat through.

If you want you can add 2 - 3 cups diced cooked chicken. Serve with grated parmesan or romano cheese.
