½ cup Sugar
½ cup packed brown sugar
3 Tbsp. All purpose flour
3 tsp. Cinnamon
¼ tsp. ginger
¼ tsp. nutmeg
7-8 cups thinly sliced and peeled apples
1 Tbsp. Lemon juice
1 Tbsp. butter
1 egg white
sprinkling sugar

9" pie crust

In a small bowl combine sugars, flour and spices. In a large bowl toss apples with lemon juice. Add sugar mixture to apples and coat well. Place apples in a 9" pie pan, dot with butter. Put top crust on and cut slits in the top for venting. Beat egg whites until foamy. Brush over top and sprinkle with sugar. Bake 375º for 35 minutes then increase oven temperature to 400º and bake an additional 10-15 minutes or until golden. Apples will still be slightly crisp when you bite into them but soft.

This is not my Grandma's recipe. That is just the name of the recipe. But its my personal favorite apple pie recipe. I do not always add the lemon juice so if you aren't feeling that don't add it. You can also use a crumb top with this recipe and it is just as good.
