Beef Enchiladas Recipe

1 Pound ground beef
1 28 oz can of enchilada sauce
1 C chopped onion
1 package of soft flour/corn tortillas
4 C shredded cheddar cheese
sour cream
salsa
chopped green onion
Directions:
Directions:
Preheat oven to 375º F

Spray a baking dish with cooking spray and then spread 3/4 C of enchilada sauce on the bottom of the dish. Brown ground beef and chopped onion in skillet. When brown add 1/2 C of enchilada sauce to the meat and stir to mix.

Place 1/3 C of meat and 1/4 C shredded cheddar in each tortilla, roll up and place in dish seam side down.
Pour remaining sauce and sprinkle the rest of the shredded cheddar and chopped green onion over the top of the rolled enchiladas and cover with aluminum foil. Bake for 30 minutes. Serve with sour cream.
