Nonna's Chicken Soup Recipe

3-4 lbs. Chicken breast (boneless skinless or split breast)
6 Carrots
2-3 Onions
Celery
2 tomatoes
1-2 bay leaves
Salt
Pepper
Basil
Garlic powder
Extra virgin Olive Oil (EVOO)

PREP: 10 minutes
Peel onions and cut into quarters
Peel carrots and remove ends and cut in half
Clean celery and cut into 4-6 pieces. I like to use the celery hearts. I save them instead of throwing them away. I usually freeze them just for making soup. The leafy middle parts are very flavorful for soups as well.

In a large stock pot on high heat add 2 tbs of EVOO
When oil is hot add 4-6 chicken breasts. (if using split chick breast remove skin for a lighter broth)
Let chicken brown for 3-5 minutes while turning making sure not to burn. Season with salt/pepper and garlic powder.
Add onions, celery, carrots and bay leaves
Stir and let cook for a few more minutes to start to brown the vegetables
Add water to fill pot to about 1 inch below top.
Add salt and pepper to taste.
Let the pot come to a boil and reduce heat to Low and simmer for 30-45 minutes
Stir soup every 10-15 minutes
After 45 minutes you can skim the top of the soup to remove the white fat and residue
Remove all of the chicken and the vegetables and save in a bowl
Strain the soup through a fine soup strainer into a smaller pot
You can cut up the cooked carrots and celery if you prefer it in the soup
You can also shred the chicken and add to the soup as well
(my Nonna used to re-fry the chicken from the soup in a hot frying pan with EVOO, salt pepper and oregano until it was crispy on all sides)
you can add noodles, broken pasta, or just the chicken and vegetables for the final soup.
Add a couple leaves of Basil just before turning off the heat
Ladle into soup bowls and serve (You can also use grated cheese and extra cracked black pepper)

There are so many ways to serve this basic chicken soup.
I like it best with the chicken shredded and added to the soup with noodles.
We also serve it without any of the vegetables
I always like it served with a good Italian grated cheese.
My favorite is the chicken re-fried in a hot fryin pan with salt and pepper with some garlic and oregano.
