1 egg ; room temp
1 cup buttermilk
3 tbsp butter ; melted

DRY INGREDIENTS
1 tsp baking soda
3/4 cup Flour
1/2 tsp Salt

Directions:
Directions:
Mix wet ingredients in one bowl and dry ingredients in another bowl

Combine wet and dry ingredients ONLY to the point that all the dry ingredients are "wet"

Do NOT over mix your batter...you should leave it LUMPY this gives it the right texture

Allow batter to sit for 20 minutes before using.

Place a small amount of oil into a non stick skillet and use 1/3 C of batter per pancake. Cook on each side until lightly browned.

Options: Crushed pecans are GREAT, Blueberries are great also..frozen are fine, but don't add too many or else they won't cook adequately
