"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

Directions:
Preheat oven to 375º F

Grind walnuts in food processor about 1/2 C at a time. Place ground walnuts in a large bowl and add cinnamon and sugar. Mix well.

Melt butter slowly. Line 12 x 17 baking pan with a filo sheet and butter with a large pastry brush. Use 6 to 8 sheets, each sheet must be buttered. On 8th sheet after butter, sprinkle with nut mixture (about a handful evenly). Keep adding filo, butter and nut mixture until nuts are all used up.

Butter the edges and fold into the mixture.

Start adding top layers, buttering each layer (about 8 more sheets).

Cut pastry into 1 1/2" diamond shaped pieces using an electric knife.

Place into oven and bake at 375º for 30 minutes. Reduce heat to 350º F and bake for an additional 30 minutes or until golden brown.

While pastry is baking make the syrup. In a large pot bring water and sugar to a boil with lemon slices and cinnamon sticks. Simmer for about 15 minutes. Stir occasionally with wooden spoon. Remove from heat and stir in honey. Cool

When baklava is finished baking spoon cooled syrup over hot baklava. Let baklava sit uncovered for a couple of hours before covering. Store in a cool place.
