3 C flour - sifted
1 C sugar
2 tsp baking powder
1/2 tsp baking soda
1 C margarine
1 egg
2 tsp vanilla

Filling
1 egg
1 lb dry cottage cheese
1/2 tsp sugar
1 lb crushed pineapple ( drained - juice reserved)

Frosting
4 TBSflour
1 C milk
1/2 C butter
1/2 C shortening
1 C sugar
2 tsp vanilla

Directions:
Directions:
Preheat oven to 350º F

Prepare crust: Combine 3 C flour, 1 C sugar, 2 tsp baking powder and 1/2 tsp baking soda. Cream together 1 C margarine, 1 egg and 2 tsp vanilla. Add to flour mixture and add 1/2 C of pineapple juice. Mix to combine and press into a greased and floured cookie sheet.

Prepare filling. Combine 1 egg, 1 lb dry cottage cheese, 1/2 tsp sugar and 1 lb crushed pineapple.

Bake for 25 - 30 minutes

Prepare frosting. Mix 4 TBS flour and 1 C milk in saucepan, cook on low until thick. Pour into bowl, alow to cool. Cream butter and shortening for 4 minutes with electric mixer, add sugar gradually, beat for 4 minutes add flour paste and bead for 4 minutes. Add vanilla and blend.

Frost cooled cake.
