2 Bunches Fresh parsley, chopped (do not include stems, just leaves)
2 Packages Chopped spinach
4 Pounds Ground pork
Garlic powder
Crushed red pepper
Salt and pepper
8 Eggs, beaten
2 Cups Grated Parmesan cheese


Dough:

3½-4 Cups All-purpose flour
¼ Teaspoon Salt
½ Cup Semolina flour
2 Tablespoons Oil
4 Tablespoons Cold Water

To Make Filling:

Break down ground pork and add to a medium mixing bowl. If using frozen spinach, microwave according to package directions. Strain out all water and ensure that spinach is finally chopped. If using fresh spinach, chop roughly before adding it to the bowl of ground pork. Chop parsley leaves and add to pork and spinach mixture. Sprinkle in garlic powder, crushed red pepper, salt, and black pepper to taste. Mix thoroughly.

In a smaller bowl, beat eight eggs and add to pork mixture. Also, add in two cups of the grated Parmesan cheese and combine. Refrigerate overnight, covered.

Dough:

Mix ingredients thoroughly. Add more water if the dough is too dry or tough. Knead on machine six to eight minutes. Dough will be a little sticky and firm.

Pat into a ball and place in a bowl. Cover with a wet towel.

Makes five separate batches of dough.
Put all dough into same bowl.
