1 1/2 lbs. skinless and boneless chicken thighs
1 to 2 bunches of broccolini
1/2 cup of jiffy creamy peanut butter
1/2 cup of water
3 TBS. of soy sauce
1 TBS. of sesame oil
1 TBS. of rice vinegar
2 tsp. of sambal oelek (any other hot sauce is OK)
4 serving of cooked rice

Preheat oven to 350º F
Dice the chicken into large pieces, dice the broccolini into bite size pieces (precook the broccolini in the microwave for about 2 minutes.

Sauce:
Using a large bowl whisk in peanut butter, water, soy sauce, sesame oil, rice vinegar and sambal oelek until smooth

Line a baking pan with foil (will help clean up)
Mix the sauce, chicken and broccolini and place in the baking pan.

Bake for about 30 minutes

Server with cooked rice
