Ingredients: Crepes
1/2 cup coconut cream(not milk) 1/2 cup water 1/4 cup melted vegan butter 1 tbsp sugar 2 tbsp agave nectar 1/4 tsp indian black salt (online stores have it ,this gives them a egg like flavor) 1 cup flour pinch cinnamon (optional) 1 tbsp vegetable oil (for pan)
Cream cheese filling
1 container vegan cream cheese 1 tsp vanilla extract 3 tbsp sugar 3 tbsp coconut milk pinch nutmeg (optional) 1 cup fresh fruit of choice 1 tbsp powdered sugar (to sprinkle on top)

Directions:Mix all crepe ingredients well, cover and chill for 3 hours. In a mixer blend all the filling ingredients until creamy and set aside.Pour some oil in a crepe pan or large skillet. Let the pan heat up on med heat for several min. Pour about 4 tbsp of the batter in the pan and swirl out with a crepe ladle or spatula,Flip when sides begin to slightly brown than flip again . Fill with about 1 dollop of the fresh fruit and cream cheese filling.Roll and sprinkle with powdered sugar. |
