Cheesecake:
1 - 8 oz. pkg. Lemon Jello
1 cup boiling water
2 T. juice of a lemon
1/4 cup sugar
1 large can evaporated milk, chilled
1 8 oz. pkg. cream cheese, softened
3 T. powdered sugar

Graham Cracker Crust:
2 cups graham cracker crumbs + 2 T.
2 T. powdered sugar
1/4 cup butter, melted

Directions:
Directions:
Mix 2 cups graham cracker crumbs, sugar and butter in a small bowl.

Put mixture into spring form (8" or 9 ") pan, pressing firmly along bottom and side.

Dissolve jello in boiling water and add sugar and lemon juice. Let set until syrup like but not set.

Whip chilled evaporated milk until thick.

Beat jello into the whipped milk, then add softened cream cheese and powdered sugar. Beat well.

Pour cheesecake mixture onto the graham cracker crumb lined pan. Sprinkle remaining crumbs on top.

Cover with plastic wrap. Chill for 4 hours or longer.

Store in refrigerator.
