1 cup (or so) sugar
3. cups warm water
3 sticks of salted butter (1 for recipe) (2 softened for spreading on dough and brushing on bread after baked)
2 pinches salt
1 cake or 2 packs of dry yeast
10 cups flour
Directions:
Directions:
Mix water, yeast and 1 stick of butter until yeast dissolves
Pour flour in large bowl, make a hollow in the middle
add 1/2 mixture and fold in flour from edges
Mix until all flour is incorporated (add additional small amounts of water at a time if needed)

Knead until all mixture is incorporated and no dry remains in the bowl. Spread butter on top of dough and sides of bowl, cover with a clean cloth.
Let rise till doubled in size

Repeat by punching the air out, kneading an letting rise again

Pinch off small amounts, make into balls and place close together in pan
Brush tops with softened butter

Let Rise again

Bake at 350º until golden brown
remove from pans and spread with softened butter again

Recipe is from Louise Smith and these are only estimates since she never measured. Add water mixture a little at a time until a good working dough forms, may need to add a little more warm water or use less.
