4 boneless, skinless chicken breasts
1 large Can of artichoke quarters in water (drained)
2 Banana peppers chopped
1 tomato chopped
8 oz sliced mushrooms
2 cups chicken stock
3 TBS capers
flour
butter
canola oil
salt
pepper

Directions:
Directions:
Heat 3 TBS canola oil in skillet, season chicken with salt and pepper, dredge in flour, brown in skillet for 3 minutes on each side. Remove chicken from ban and set aside. Add banana peppers, mushrooms, tomatoes, artichokes and 1 TBS butter, saute until vegetables are soft. Add chicken back to pan with chicken broth, simmer for 15-20 minutes. Add 3 TBS capers.

Serve with pepper risotto
