1 TBS flour
1/4 tsp salt
1/4 tsp pepper
15 oz veal
2 tsp olive oil
1/2 C chicken broth
2 TBS fresh lemon juice
1 TBS fresh chopped parsley
1 TBS capers

Directions:
Directions:
Combine flour with salt and pepper. Coat veal on each side with flour mixture.

In medium non stick skillet heat oil. Add veal and cook on each side until lightly browned. Remove from pan and set aside.

In the same skillet combine broth, lemon juice, parsley and capers, bring to a boil over high heat. Cook 2 minutes, or until liquid is reduced to 1/3 cup.

Return veal to skillet with broth until heated through.
