3 C. thinly sliced, unpared zucchini (about 4 small)

1 C. Bisquick

1/2 C. grated Parmesan cheese

1/2 tsp. salt

1/2 tsp. dried oregano

Dash of pepper

1/2 C. vegetable oil

1/2 C. chopped onion

2 Tbsp. fresh chopped fresh parsley

1/2 tsp. seasoned salt

1 clove garlic, chopped 

4 eggs, slightly beaten

Heat oven to 350. Grease a 13x9x2-inch oblong baking dish. Mix all ingredients; spread in prepared pan. Bake until golden, about 25 minutes. Cut into pieces, about 2-inch squares. Makes about 3 dozen.

To speed up the process, I used the food processor to shred the zucchini. Overall, I think I prefer this method instead of slicing the zucchini. Either way, they were still good.
