1 c. butter 1 c. sugar 2 eggs separated
1 ½ c. flour 2 t. vanilla ½ tsp. salt ½ tsp. baking powder
1 1/3 c. coconut raspberry preserves

Directions:
Directions:
Grease baking sheets. Cream butter, sugar, egg yolks and vanilla. Combine flour, salt, baking powder. Add to creamed mixture. Form into 1” balls. Beat egg whites until frothy. Pip dough balls in egg whites and roll in coconut. Place on greased cookie sheets. Press thumb and add preserves. Bake at 375º for 8-9 minutes.
