4 eggs
1 T heavy cream
Kosher salt and freshly ground black pepper
2 T olive oil
1 quarter sweet onion, diced (about 1/4 cup)
2 cups of fresh spinach chopped
1/2 C shredded swiss cheese
1 medium tomato sliced
good balsamic vinegar

Directions:

Set oven rack 5 inches from heat source; Turn on broiler

Whisk eggs, cream 1/2 tsp salt and 1/4 tsp pepper in a medium bowl and set aside.

Swirl oil along bottom and up sides of 91/2 inch skillet over medium low heat, add onion and saute, stirring occasionally until soft and translucent. Add spinach turning until it wilts and saute for 5 min until moisture evaporates.

Add egg mixture then top with cheese and tomatoes. Cook until the frittatta is three-quarters set, tilting the skillet so the runny egg slides toward the edges.

Broil until puffy and brown 3 to 5 minutes. Remove from oven and allow to set for 5 minutes. Drizzle with balsamic vinegar.
