1 whole chicken
2 onions
Water
Salt

Chicken broth
4c flour

Cover medium size chicken with water, add salt, per and two onions cut up. Bring to a boil. Once boiling lower heat to simmer. Remove chicken and let the chicken fat cool.

Scoop fat off the top and put into cups, get two cups of fat as much as you can. Add chicken broth if needed.

Use 4 cups of flour. Season the two cups of fat broth with salt and pepper, add flour until you can handle it or roll it and cut it into squares. Take small amounts and roll very thin....the thinner the better.

Bring chicken broth from chicken in pan to a hard boil then lower to simmer for 15 minutes.

Be sure to season the fat broth before making the dough, making it very salty...dough tends to absorb the flavor.
