3 C self-rising flour
1/2 C cold butter, cut into chunks
1 C sharp cheddar cheese, grated
10 slices bacon, cooked and crumbled
1 1/4 C buttermilk

Optional: 3 TBS butter, melted

Directions:
Preheat oven to 450º. Line baking sheet with parchment paper or grease a cast iron skillet.

In a large bowl, cut the butter into the flour using a fork or pastry blender, until the mixture is crumbly. Add in cheese and bacon, then add the buttermilk. Stir just until the dry ingredients are moistened.

On a lightly floured surface, turn out dough and kneed lightly 5 times. Form biscuits by hand or pat out 3/4 inch thick and use a 3 inch cutter.

Place biscuits on prepared pan and bake 11-13 minutes or until golden. Brush with melted butter if desired.
