Cookie:
1/4 c butter
1/2 c milk
2 sq chocolate OR 6 T cocoa and 2 T butter
2 eggs
3/4 c sugar
1 tsp vanilla
1 1/4 c flour
Pinch of salt

Frosting:
1 1/2 oz sq unsweetened chocolate OR 4 1/2 T butter
1/4 c butter
1 1/2 c confectioners' sugar
1 egg white
1 tsp vanilla extract

Cookie:
Boil the butter, milk, chocolate for one minute - cool. Beat the eggs and mix in the sugar.
Add the cooled mixture - vanilla - flour and salt. Spoon into a waffle iron and bake about 50 seconds
Place on baking rack to cool

Frosting:
Melt the chocolate and butter in a small heavy saucepan over low heat; stir to blend. Beat in the powdered sugar - beat in the egg white and vanilla, adding a little water if necessary to make smooth, slightly soft frosting. Spread over the waffle cookie and let set.

Store these in Tupperware as soon as the frosting sets to keep the waffle cookies soft and moist. we made these every Christmas.
