1 pound dried white navy beans
1 meaty ham bone
3 quarts water
3 medium onions, finely chopped
3 cloves garlic, minced
3 stalks celery, finely chopped
1/4 cup parsley, finely chopped
1 cup mashed potatoes
1/4 teaspoon salt
salt to taste
parsley or chives to garnish

Directions:
Soak beans overnight or use quick soak method. Drain beans and place with ham bone in large soup kettle. Add cold water. Bring to a boil and simmer over low heat two hours. Add chopped vegetables to pot and simmer an additional hour. Season with salt and pepper. Remove meat and bone from soup. Dice meat and return to soup. Discard the bone. Top with parsley and/or chives
