1 pound can red salmon
1 8 ounce package cream cheese
1 tablespoon lemon juice
2 teaspoons onion, grated
1 teaspoon prepared horseradish
1/4 teaspoon salt
1/2 teaspoon liquid barbecue smoke
1/2 cup chopped pecans (Optional)
3 tablespoons chopped parsley (Optional)
Green olives with pimento (Optional)

Directions:
Directions:
Drain, flake and debone salmon. Combine with next 6 ingredients. Chill at least 4 hours. Combine pecans and parsley. Shape salmon mixture into a log. Roll in nut mixture. Chill. Serve with crackers.

For a big fish mold, make two recipes, put into a mold sprayed with pam and chill. Unmold and decorate with olives and pimentos for fins and scales
