Turkey giblets (heart, liver, gizzard) chopped.
Turkey neck boiled and shredded
2 cans chicken or turkey broth
1 yellow onion diced
1 rib of celery, diced
1 carrot, diced
2 cups of drippings from roasted turkey
1/2 cup cornstarch
1/2 cup water

Directions:
Directions:
1. Put giblets and neck in a heavy saucepan. Add chicken broth, onion, celery, carrot, and salt and pepper. Add cool water to cover.

2. Bring to a boil. Reduce heat to simmer. Cover and stir occasionally for 4 hours.

3. Pour through a strainer into a saucepan. Mix together cornstarch and water until smooth. Stir into broth. Cook 4-5min or until thickened.
