Pasty Dough:
2 1/2 C all purpose flour
1 tsp salt
2 1/2 sticks cold butter
1/2 to 3/4 C ice water

Filling:
8 ounces chuck steak, chopped into 1/4 inch cubes
1 potato, chopped into 1/4 inch cubes
1 carrot, chopped into 1/4 inch cubes
1/2 to 1 small onion, finely minced
salt and pepper to taste

1. Mix the flour and salt. Using a food processor or pasty blender, cut the butter into the flour until it resembles fish tank gravel and course meal. Sprinkle 1/2 C of icy cold water over the top and mix with a fork. Add more water 1 TBS at a time if the dough is too dry to come together. Divide dough in half, wrap in plastic, and chill for 2-3 hours.

2. Combine the steak, potatoes, carrots, onions, salt and pepper in a mixing bowl.

3. Preheat the oven to 425º. Divide each ball of dough into 4 equal sections so there's a total of 8. Using a rolling pin on a floured surface, roll out each small ball into a 6-inch circle. Place about 1/3 C of the filling mixture into the center of each circle. Moisten the edges with water, then fold over and crimp closed. Cut slits in the top to vent.

4. Place pasties on ungreased cookie sheet and bake for 10 minutes. Reduce heat to 375º and bake an additional 45 minutes to 1 hour or until golden brown.
