Simple Salsa (look up recipe)
Cooking spray
2 lbs. freshwater Catfish
Cooked rice
Shredded cheese
Sour cream
Directions:
Directions:
Spray a large baking dish with cooking spray. Arrange fish in dish and spread the prepared Simple Salsa over top. Bake at 400 for 20 minutes. Serve over a bed of cooked rice and top with shredded cheese and sour cream. Garnish with lemon.
