3 cups fresh cilantro
1 cup plain Greek yogurt
1-2 clove garlic, peeled (to taste)
1-2 Tbsp. lime juice (to taste)
salt and pepper to taste
* Optional avocado oil (to thin it out) if desired

Directions:
Directions:
Place all ingredients in a food processor (or blender). Process until sauce is relatively smooth, about 30 seconds. Scrape down the sides of the food processor bowl and pulse again to form a smooth sauce.
Taste and add seasonings (salt, pepper, lime juice) as necessary. Serve immediately or store in the fridge for up to a week. It thickens when sits in the fridge. Add a dash or two of avocado oil if you'd like to thin it out.
