Grandma Dorothy's Cinnamon Crumb Coffee Cake Recipe

Ingredients: 3 c. flour 2 1/4 c. sugar 3/4 tsp. salt 4 tsp. baking powder 1/2 lb. butter or margarine 1 1/4 c. milk 2 unbeaten eggs 1 1/2 tsp. vanilla

Directions:Set oven to 375º.
Sift sugar, flour, salt and baking powder all together three times.
Rub the butter in by hand until it feels like corn meal. (Note: I start with chunks of cold butter in the dry ingredients; use mixer on slow-mdm speed until it is fine crumbs.)
Put aside 3/4 cups of this mixture for the topping.
Add milk, eggs and vanilla to the rest of the crumb mixture. Stir with a large spoon just until mixed. Batter will be lumpy. Do not beat!
Pour batter into a 9"x13" greased pan.
TOPPING: Add 2 tsp. cinnamon and 2 T. butter to the crumb mixture. (Original recipe said melted butter. Cutting in cold butter has worked better for me.) Sprinkle crumb mix over the batter.
Bake at 375º until done (35-45 minutes). |

Notes: Charley's mom, Megan's grandma, Dorothy "Dot" Reese, was a great cook. This coffee cake was one of Charley's favorite treats so it is always on the menu for special morning meals. It's also a favorite of ALL his family.
(The recipe can easily be cut in half for a smaller batch. In that case, I still keep out 3/4 c. for topping and cut the milk down slightly.)
