1 1/2 cups butter, softened
1 cup brown sugar
1 cup sugar
2 large eggs
2 teaspoons vanilla extract
2 1/4 cups all purpose flour
1 teaspoon baking powder
1/8 teaspoon salt
1 cup finely chopped almonds

Directions:
Directions:
Cream together butter and sugars, until light and fluffy, about 5 minutes.
Add in eggs and vanilla and beat again.
Combine flour, baking powder and salt. Add flour mixture to dough, one third at a time until all added.
Stir in almonds.
Using a small cookie scoop, place dough on a parchment lined baking sheet three inches apart (these cookies spread.)
Bake in a preheated 350 degree oven for 8-9 minutes. Until edges turn golden.
Let cool on baking sheet for 5 minutes before removing to racks to cool completely.

When preparing Crisp Almond Cookies one must be sensitive.If the preparer of Crisp Almond Cookies is clumsy the dish will come out bitter. The moment Alex opened the jar, the smell of roasted almonds transported her to the day of the Halloween of 2010, the day when we baked the almond cookies for the first time. Grandmother Catherine closed her eyes each time she took a bite from a cookie she had in her hand. Life would be much nicer if one could carry the smells and tastes of this maternal home wherever one pleased. The almond cookie was like a little round piece of heaven. It was magnificent to see that everyone's lips were dancing after they tried those unforgettably tasty cookies.
