• 2 pounds dried split peas
• 3 pounds ham chopped
• 6 tablespoons unsalted butter
• 2 cups finely chopped yellow onions (about 2 med onions)
• 1 ½ cups finely chopped carrots (about 6 carrots)
• 1 ½ cups finely chopped potatoes (about 1 large potato)
• 3 teaspoons minced garlic
• 1 teaspoon celery salt
• 2-3 teaspoons salt
• 1 teaspoon freshly ground black pepper
• 1/2 teaspoon crushed red pepper flakes
• 3 tablespoons of sugar
• 10-14 cups water
• 2 bay leaves
• 1 teaspoon fresh thyme

Directions:
Place the peas in a large pot or bowl, cover with water by 2 inches and soak 8 hours or overnight. Drain the peas and set aside.
In a large pot, melt the butter over medium-high heat. Add the onions and cook, stirring, for 2-3 minutes. Add the potatoes, carrots and cook, stirring, until just soft, about 5 minutes. Add the garlic and cook, stirring, for 30 seconds.
Add the ham and stir in. Add the drained peas, salt, pepper, and pepper flakes, celery salt, and cook, stirring for 2-3 minutes. (It will be thick and hard to stir.)
Add 10-14 cups of water, the bay leaf, thyme and sugar, bring to boil. Reduce heat and simmer, stirring occasionally, until the peas are tender and to desired thickness, about 3 hours . (Add more water as needed, if the soup becomes too thick or dry.)
Remove the bay leaf and discard. Adjust the seasoning, to taste.
