3lb roast of lamb, approx.
4 large garlic cloves
2T fresh chopped rosemary
1 tsp leaf oregano
a pinch of salt
½ tsp freshly ground black pepper.
1 cup of dry red wine

Directions:
Directions:
1. Cut garlic into thin slices. Cut small slits into outside fat and insert garlic slices.
2. Sprinkle lamb with a mixture of rosemary, oregano, salt and pepper
3. Sear at 450 for 15 min and then reduce heat to 350. Raost uncovered 30 min. per pound or longer, depending on how you like it done. 30 min. gives you rare.
4. During last half hour pour red wine over lamb and baste frequently.
5. Cover with a foil tent 10 min.
