4 c. zucchini, thinly sliced
1 large onion, chopped finely
1/2 c. Parmesan cheese
1/2 c. vegetable oil
3/4 c. sharp cheddar cheese, shredded
1 c. bisquick
4 eggs, beaten lightly
4 T. parsley, minced
1/2 teas. salt
1/2 teas. pepper

Mix all ingredients together. Pour into a greased pie pan and bake in a 350 F. oven for 40 minutes.
