Ingredients: 5 eggs 1 c. sugar ¼yeast cake (or ½ oz. if in powder form) ½ shot rum ¾ stick melted butter 1 lemon rind salt pepper 3 c. flour, approximately

Directions: |
Directions:Dissolve yeast in a mixing bowl in 1 c. warm water. If using yeast powder, wait to proceed with recipe until the yeast bubbles and forms a foam.
Beat eggs and add to yeast. Add sugar. Mix well. Add melted butter, rum, lemon rind, salt and pepper. Mix well. Stir in flour a little at a time until a thick dough forms.
Spray a large bowl with cooking spray. Set aside.
Transfer the dough to a floured surface and shape into a ball. Place in the bowl. Cover with plastic wrap. Let it rise in a warm place until it doubles its size.
Spray a panettone mold with cooking spray. Set aside.
Transfer the risen dough back onto a floured surface and shape into a ball. Transfer it to the greased panettone mold. Cut a cross on top and brush with some melted butter or pray with the cooking spray. Cover with plastic wrap and let it rise for one more hour, until it doubles (almost triples) its size.
Bake for 30 minutes at 250º. Bake for another 30 minutes at 350º. |
