5 large eggs
1 cup milk
1 tsp salt
1t4 tsp pepper
1 (l-lb) pkg saltine crackers
8 catfish fillets, 3-1/2 to 4 lbs
Vegetable oil

Directions:
Directions:
Whish together first 4 ingredients.
Process saltine crackers in food processor until finely crushed.
Dip fish in egg mixture; dredge in cracker crumbs.
Pour oil to depth of 5 inches in a dutch oven; heat to 375°F.
Fry fish , in batches, 4 to 6 minutes on each side or until flakes with a fork.
Drain on paper towels.
