Grandma DiMarzio’s wedding soup

1 chicken
1 onion
2 stalks of celery with leaves
salt and pepper

4 lbs of curly endive
1/12 cups grate parmesan cheese
12 eggs
1 tsp salt
1/2 tsp pepper

small meatballs (see Grandma DiMarzio's meatball recipe)

pastina or any small pasta

Directions:

Chicken broth ( I made my own but you could certainly use store bought)
Put one whole chicken in a pot with water, onion, celery, salt and pepper. Let boil for about 1 1/2 hours or until chicken is thoroughly cooked.
Remove chicken, let cool
Drain liquid
Shred chicken

Rest of soup:
Boil 4 lbs of curly endive until tender, drain, cool and chop it up.
Combine 12 eggs, 1 1/2 cups of grated parmesan cheese, 1 tsp salt and some pepper
Combine the egg mixture with the endive.
Pour the endive mixture over boiling chicken broth. Cook for about 20 minutes to make sure the eggs are cooked.
Add the shredded chicken to the soup. (Optional, I also added small meatballs).
I serve mine with some pastina (small pasta). You could also use orzo.
