lb of Pronios Italian sausage
2 lb of beef or spare ribs
1 lb of chicken legs

1/4 c of olive oil
1/2 tsp of garlic powder

5 15 oz cans of sauce
1 28 oz can of crushed or pureed tomato
1 16 oz can of tomato paste

1/2 tbsp of black pepper
1 tbsp of salt
3-4 garlic cloves crushed
1/4 cup of basil

1/2 cup of Romano or Parmesan cheese
Rind of Parmesan or sharp Provolone cheese

Directions:
Directions:
In a frying pan add meat, olive oil and garlic powder, a pinch of salt and pepper. Cook slowly turning over to brown on all sides.

Add all ingredients in a large sauce pot, cover and simmer. once meat is done add to the pot. Bring to a boil while stirring. Then leave covered and simmering for at least 2 hours. Add the rind of cheese.

The meatballs were made separately and added to the sauce and simmered to perfection!

Sundays were made for family. At the heart of every Sunday dinner was sauce and meatballs. The sauce cooked long and slow and it started with braised meat from Pronios. When I close my eyes, I see Nonna standing in her downstairs kitchen braising the meat and putting the big pot of sauce on. We were blessed to have Sundays together in a time when family does not sit for a meal together.
Enjoy Nonna's sauce on Sunday and freeze left overs.
