1/3 cup quick cooking barley
1/4 cup uncooked brown rice
1⅔ cup hot water
1 cup sliced fresh mushrooms
1/4 cup carrot cubes
2 tbsp fresh parsley
1 tsp lemon juice
1/2 tsp thyme

Directions:
Directions:
In 2 quart casserole combine all ingredients mix well.
Cover and microwave on high for 5 minutes.
Reduce power to 50%.
Microwave for 35-45 minutes or until liquid is absorbed and rice is tender.
Let stand uncovered 5 minutes.
