2 lbs beef round, or leftover roast works well
3 T olive oil
3 T flour
2 onions, diced
3-4 garlic cloves, minced
3 large diced carrots
4 diced celery stalks
Mushrooms, amount per personal choice, sliced
4 c beef broth, or more if needed
⅓ c tomato paste
1 T Worcestershire sauce
2 T soy sauce
˝ tsp salt
˝ tsp pepper
˝ tsp paprika
˝ tsp chili powder
˝ tsp thyme
˝ tsp oregano
6 large potatoes


GRANDMA’S BEST DUMPLINGS:

1 c unbleached flour
1˝ tsp baking powder
˝ tsp salt
˝ c buttermilk

STEW:

Cut beef in large cubes. Heat the oil in a large kettle or Dutch oven. Add flour to plastic bag and toss with the beef to coat well. Add the beef to heated oil and brown on all sides. Add the onions, garlic, carrots, celery and mushrooms. Sauté until tender. Stir in the beef, broth, tomato paste, Worcestershire, soy and seasonings. Cover and simmer for 45 minutes. Dice the potatoes. Add to the stew and continue to simmer for an additional 30 minutes. Drop in the dumplings per directions below.

GRANDMA’S BEST DUMPLINGS:

Mix flour, baking powder and salt together. Gradually add the buttermilk until a light soft dough is formed. Drop into stew in small spoonfuls. Cover and simmer for 20 minutes before serving. Do not uncover during the simmering process.
