1 Tbsp olive oil
1 4-5 lb boneless pork shoulder/butt trimmed of excess fat
1 lime, juiced
5 cloves garlic, minced
1 medium onion, roughly chopped
1 4 oz can diced green chilis
1 c chicken broth
3 bay leaves
1 Tbsp chipotle chili powder
1 tsp pepper
1 tsp salt
1 tsp chili powder
2 tsp cumin
2 tsp oregano

For serving: flour tortillas, black beans, pan fried onions and red peppers, fresh tomatoes, guacamole, and sour cream

Directions:
Heat oil in large pan over high heat. Add the pork and sear on each side until browned, about 1-2 minutes per side. Transfer pork to slow cooker.

Add remaining ingredients to slow cooker. Cook on low for 8 hours or on high for 4-5 hours. Remove bay leaves.

Remove meat from slow cooker and shred. Make sure to keep the liquid.

Transfer shredded pork to a baking sheet and broil 5 minutes until crispy.

Remove from oven and return to reserved liquid.

Serve fajita style with flour tortillas, black beans, pan fried onions and peppers, fresh tomatoes, guacamole and sour cream.
