1 c. shortening
1 c. brown sugar
1 c. white sugar
2 tsp. vanilla
2 eggs, beaten
1 c. crushed pineapple, drained
1 c. crushed pecans (or other nut of choice)
1/2 tsp. baking soda
2 tsp.baking powder
1/2 tsp.salt
4 c. flour
Directions:
Directions:
Cream shortening and sugars together. Add vanilla, eggs, pineapple and nuts to mixture.
Sift baking soda, baking powder, salt and flour and add to mixture.

Drop by spoonful onto baking sheet. Bake 10-15 minutes at 375º
