4 cups raw potatoes; diced
1/4 cup celery; chopped
1/4 cup carrots; chopped
3 cups water
1 tablespoon onion; minced
1 teaspoon parsley flakes (optional)
salt and pepper to taste
1 envelope dry cream of chicken soup
2 cups milk
1/2 pound Velveeta cheese; cubed

Directions:
Directions:
Cook vegetables in water until tender, with parsley, salt and pepper. Stir in soup, milk and cheese. Do not boil. Stir over low heat until ready to serve.
