8 oz raw bacon (chopped)
2 lb beef stew cubes
1/3 cup flour
1 lb onions cut in 1 1/2 in pieces
1 head garlic
3 cups chicken stock
1 litre red wine
1 large chopped smoked portabella mushroom
1/3 cup chopped or dry thyme.
2 tsps. tomatoe paste

Directions:
Directions:
Cook bacon on medium heat until lightly crisp
Add cubed beef and sear until brown.
Season with salt and pepper
Add carrots and onions. Continue cooking for five mins.
Add cooking wine and chicken stock.
Simmer for 20 minutes
Add mushrooms and simmer for 30 mins.
Add thyme, salt and pepper.
Mix equal parts flour to cooking oil and whisk into stew and allow to return to boil.
